Mango Lime Dressing:
2 Tsp. Fresh ginger, peeled and minced
1 Tsp. Fresh garlic, peeled and minced
3 Tbsp. Lime juice
1 Tbsp. Agave
3 Tbsp. Rice Wine Vinegar
½ Cup Fresh mango, peeled and diced
Pinch White pepper
2 Tbsp Oil of your choice
1 Quart Mixed salad greens of your choice
1/5 Cup Red onion, sliced thinly
3 Tbsp. Carrots, sliced thinly
½ Cup Mango, peeled and cut into thin slices
1/3 Cup Cucumber, sliced thinly
1/3 Cup Cherry tomatoes
1 Cup Spicy Curry Nuggets
1/3 tsp Salt
1/3 tsp Pepper
Cut all veggies and tofu and set aside.
Puree ginger, garlic and mango in a food processor.
Add all other dressing ingredients to the puree except the oil.
Then, add oil slowly to blend. Toss all ingredients together and enjoy!
