Red Red Rice with Marinated Tofu

Serves 6-8

Ingredients

2 Cups                                 Tea Infused Tofu

2 Cups                                Cooked Red Rice

2 Cups                                 Red Cabbage, diced

½ Cup                                  Red Onion, diced

1 Cup                                   Blood Orange, chopped into ½” pieces

2 Tsp.                                   Blood Orange zest

1/3 Cup                              Blood Orange Juice

2 Tbsp.                               Olive Oil

1 Tsp.                                   Salt

1 1/3 cup                          Farro, cooked and cooled

Pinch                                   Black Pepper

Pinch                                   Chile Flakes

Directions

Cook the rice:

Combine 2 cups of water and 1 cup of dry red rice in a saucepan. Bring to a boil and then lower to a simmer. Cook until rice is fluffy, about 40 minutes.

Chop all vegetable and tofu.

Mix all ingredients together and enjoy!
