1 ½ cups Dry couscous
3 cups Water
2 2/3 cups Braised Tofu, cut into ½” cubes
¾ Cup Carrots, peeled and thinly sliced
¾ cup Red onion, peeled and thinly sliced
3 Tbsp. Cilantro, finely chopped
2/3 cup Mandarin Oranges, peeled and cut into large pieces
3 Tbsp. Mint, thinly sliced
1/3 cup Olive Oil
1/3 tsp. Orange Zest
1 tsp. Salt
1/3 tsp. Chili Flakes
Bring 3 cups of water to a boil. Add dry couscous and turn off the heat. Let sit for 10 minutes until couscous is fluffy.
Prep veggies and Braised Tofu. Set aside.
Mix all dressing ingredients together in a small bowl.
Toss all ingredients and dressing and mix gently. Serve over couscous.
