Ras El Hanout Poached Yuba

2 lbs yuba
1 Tablespoon salt
3 Tablespoons ras-el-hanout

  1. Chop up yuba into 1/2 inch ribbons
  2. Cover yuba with water, add salt and spice. Simmer 45 minutes.
  3. Drain thoroughly.  Squeeze very dry.
  4. Wrap with cheesecloth, tie tightly, steam loaves 45 minutes.

Yield: 1 loaf – 24 bite-cubes
