Five Spice & Veggie Couscous Bowls with Mandarin Marinade

Ingredients
Couscous
2 (100z) package Extra Firm or Braised* Tofu, cut into 1/2” cubes Locate Product
1 1/2 cup dry couscous
3 cup water
3/4 cup carrots, peeled and thinly sliced
3/4 cup red onion, peeled and thinly sliced
3 tbsp cilantro, finely chopped
Dressing
2/3 cup mandarin oranges, peeled and cut into large pieces
3 tbsp mint, thinly sliced
1/3 cup extra virgin olive oil
1/3 tsp orange zest
1 tsp salt
1/3 tsp chili flakes

Instructions
Bring 3 cups of water to a boil. Add dry couscous and turn off the heat. Let sit for 10 minutes until couscous is fluffy.
Prep veggies and Braised Tofu. Set aside.
Mix all dressing ingredients together in a small bowl.
Toss all ingredients and dressing and mix gently. Serve over couscous.
