Five Spice & Veggie Couscous Bowls with Mandarin Marinade

Ingredients

Couscous

  • 2 (100z) package Extra Firm or Braised* Tofu, cut into 1/2” cubes Locate Product

  • 1 1/2 cup dry couscous

  • 3 cup water

  • 3/4 cup carrots, peeled and thinly sliced

  • 3/4 cup red onion, peeled and thinly sliced

  • 3 tbsp cilantro, finely chopped

Dressing

  • 2/3 cup mandarin oranges, peeled and cut into large pieces

  • 3 tbsp mint, thinly  sliced

  • 1/3 cup extra virgin olive oil

  • 1/3 tsp orange zest

  • 1 tsp salt

  • 1/3 tsp chili flakes

Instructions

  1. Bring 3 cups of water to a boil. Add dry couscous and turn off the heat. Let sit for 10 minutes until couscous is fluffy.

  2. Prep veggies and Braised Tofu. Set aside.

  3. Mix all dressing ingredients together in a small bowl.

  4. Toss all ingredients and dressing and mix gently. Serve over couscous.

  5. Enjoy!
