Tofu Red Curry

2 12-oz Hodo Firm Tofu, cut into 1 inch cubes
3 cloves garlic, sliced

2 cups coconut milk
1 Tbs Thai red curry paste
1 Tbs palm sugar
1 Tbs tamari
1 tsp kosher salt
½ cup basil leaves

Sauté garlic in a little coconut milk till fragrant.  Add curry paste, remaining coconut milk, sugar, tamari and salt and simmer 15 minutes.  Add Hodo Firm Tofu and heat through.  Fold in basil leaves just before serving.

Serves: 4
