Macerated Kale with Yuba Noodles Salad

kale yubaOne can never get have too much kale.  This super easy salad is literally straight out of the bag(s).  TJ’s has some organic, pre-cut kale that’s perfect for this.
10 oz pre-cut Tuscan Kale (1 lb if using whole)
8 oz Hodo Spicy Yuba or Sesame Noodles
A splash of lemon juice

If using whole kale, strip the rib and tear into bite size pieces.  In a bowl, add yuba strips to kale and using your hands, massage the kale with the yuba strips, till kale is well macerated.  Splash on lemon juice and toss to combine.

Serves: 6
