20 Minute Indian Spiced Tofu Tacos

Ingredients

  • 1 (8oz) package Hodo Indian Spiced Tofu, cut into 1” cubes, excess marinade reserved Locate Product

  • 1/2 cup plain unsweetened vegan greek yogurt

  • 2 tbsp cilantro leaves, finely chopped, plus more for garnish

  • 1 green onion, finely chopped

  • 1/2 lime, juiced

  • 1/2 cup red cabbage, shredded

  • 1/2 avocado, sliced

  • 4 6” tortillas, warmed in skillet

Instructions

  1. Preheat oven to 400 degrees and line a metal baking sheet with parchment paper. Spread cubed tofu on to baking sheet and bake for 15 minutes.

  2. Meanwhile, combine remaining marinade with yogurt, cilantro, onion, and lime juice. Set aside.

  3. Remove the tofu from the oven and transfer to a bowl. Drizzle with yogurt sauce and toss to coat.

Fill each tortilla with tofu and top with cabbage, avocado, and cilantro.
