Vegan Baked Fried Rice with Soy Gochujang Sauce

“Fried rice is a classic dish that everyone loves. However, sometimes you don't want to sit by the stove as your fried rice cooks. That is where this vegan baked fried rice with soy gochujang sauce comes in.” - Kristi Roeder


Ingredients

Fried Rice

  • 1 (10oz) package Hodo Organic Extra Firm Tofu, crumbled into small pieces Locate Product

  • 2 cups cooked and cooled brown rice (you can prep this ahead of time)

  • 1 head medium sized broccoli, cut into small pieces

  • 2 tbsp sesame oil

  • 1/2 - 1 tsp salt

  • 1 tsp garlic powder

  • Black pepper to taste

Sauce

  • 3 tbsp soy sauce

  • 2 tbsp rice wine vinegar

  • 2 tbsp gochujang paste

  • 1 garlic clove - minced

  • 2 tsp maple syrup

  • 1 tsp grated ginger

Optional Toppings

  • 1/2 diced avocado

  • 1/4 cup chopping scallions

Instructions

  1. Preheat oven to 425 degrees.

  2. Add rice, carrots, tofu and broccoli to a sheet pan lined with parchment paper. Coat in oil, salt, pepper and garlic powder. Bake for 30-35 minutes.

  3. Add sauce ingredients to a bowl and mix together until smooth.

  4. Divide out fried rice into two bowls, pour sauce evenly over both servings. Top with scallions and avocado if using
